Saturday is supposed to be cheat day, and boy, did I cheat! I thought I’d be good and wait until 3:30 pm to eat. We were ordering tacos from this place in LA called Kraken Tacos. I dreamt about these taco’s all week; they are a real treat. They were supposed to arrive at 3:30 pm but did not arrive until after 5 pm. We were at my in-laws and the neighbor across the street was having a birthday party. She had a bunch of French fries left-over, so she gave them to us.

Jean Valjean and I were exhausted. We had done errand after errand, buying a fridge, searching for sugar-free pumpkin spice creamer, procuring vodka, and veggies for the week at Costco. I gave in and had fries.

Since Saturday was cheat day I had half a cookie from ’My Cookie Dealer, ’ a place in New York that one of my friends told me about. We ordered a bunch of cookies from them for my birthday back in August. We are eating through them and other batches our housemate has purchased. I can only have them on Saturday’s, so it’s hard to watch JVJ and our housemate eat them but I’m surviving.

For lunch today, Sunday, we had a brisket that I cooked. I literally cooked it for 39 hours. It came out so good. I may do a separate post about that at some point. We went back to the in-laws for lunch and I cheated a bit. I ate some crab mac and cheese as well.

For dinner, I had the brisket again with a salad.

My blood sugar was not great today. I’m sure it’s a reflection of what I ate yesterday. I pounded some water after we got home from lunch today, and I was able to get it in check. I did not end up recording my average yesterday.

September 18, 2020 – RBG and Earthquakes

I started this post yesterday, on the 18th and then a bunch of things started happening, RBG passed away, and then we had an earthquake. The earth was quaking with sadness. You all, it was the weirdest thing. I was on the phone with a great friend who lives in Burbank; he said; we’re having an earthquake; two seconds later, I felt it here in Venice Beach.

I had leftover Taco salad for lunch today. I used the leftover taco meat, tomatoes, feta, and a Vidalia onion vinaigrette.

For dinner, I made chicken wings in the air fryer. I first marinated them in freshly squeezed lemon and lime juice with garlic. Then I took them out of the marinade and dried them off. I added some garlic olive oil and then tons of dry ranch dressing seasoning. Then I cooked them for 10 minutes in the air fryer at three hundred and seventy-five degrees. Then I turned them and cooked them for another ten minutes.

There is a great restaurant called Sage; they do mainly vegan food. I needed some sides to go with the chicken wings, so we ordered their cauliflower wings and fried artichoke hearts. I called them from Door Dash, scheduled it for between 6-6:30 pm, and came at 7:10 pm. The weird thing was that the driver picked them up at 5:50 pm and drove them around with other orders. By the time they got to us, they were cold.

Ok, my blood sugar was great yesterday until I took it before going to bed, then it skyrocketed. I think it was the fried food that I ate because I’m pretty sure the cauliflower and the artichoke hearts had flour. The average is still okay, but it’s not as good as it would have been if I hadn’t eaten unhealthy.

There is good news; this estimates my A1C as 7.0, the last test I took was 7.6, so I’m moving in the right direction!

I love sandwiches, the kind with lots of meat, just like I used to get at the deli when I lived on Long Island. The thing about sandwiches is that they have bread, duh. Many places say that they do lettuce wraps, but none like Mike’s Deli here in Los Angeles. It’s the only sandwich that feels like I’m eating a real one. I’ve ordered lettuce-wrapped sandwiches from other places, and it always feels like I’m just getting a salad.

Dinner is going to be Taco salad tonight but, we decided to meet at the in-law’s house for a cocktail. So, I prepped so we don’t have to stop somewhere, and I will be tempted.

It was nice to come home and have the prep done. I’m also proud of myself because my sister in law was out and offered to bring us donuts, but I resisted. I later found out it was a reese’s donut and was pissed. That is my kryptonite.

This is really working. My blood sugar was great today. It’s getting lower and lower. I need to come clean; this is only two readings. I want to take one more, but I won’t be up to take it two hours after eating. We are late tonight.

I didn’t eat until 2 pm again today. I’m really liking this way of eating. I feel better when I eat this way. One of these days i’ll have to weigh myself and see if this is making a big difference. I had the left over chicken lasagna from the other day and veggies from last night.

Y’all, I don’t usually brag about what I cook, but this dinner was phenomenal! I put the chuck roast in the crockpot this morning after seasoning and searing with the garlic, salt, and pepper from Kinders. I added a cup of the package of Lipton onion soup mix and water. Then I cooked it for 9 hours on low. Then I made some cauliflower rice; I love the frozen from Costco, so I used that. I added some cherry tomatoes, heavy cream, and parmesan. It came out heavy, just like risotto, and was exactly what I wanted.

I met my water goal today, although it was a little more challenging. I saved too much of it for later in the day. I wish that I had drank more consistently throughout the day.

I’m deeply grateful that all of my family is safe on the gulf coast. Hurricane Sally took a turn closer to my family, but they all are safe and sound. I am praying and thinking about all the souls that are struggling this evening.

Nightmare

JVJ had a nightmare last night. All of a sudden, I heard him screaming, and I had to wake him up. The strange thing is that he dreamed of losing a passport, and he never loses anything. I’m the ’loser’ of the family; if my head weren’t attached, I’d be asking where it was.

Today was a day of watching 90 Day Fiance and watching the LA Clippers lose in the basketball playoffs. Please do not get used to me talking about sports, because I will not be that person. As you know, I much prefer theater. I only watch sports when forced.

I was playing around on Instagram; you should follow me @selfmadediabetic. I saw a picture of cucumbers with tuna salad, so I decided that I would make them for lunch since I had everything. Not going to lie; I was concerned that last night’s dinner might have caused a spike in my sugar. After doing some research, I don’t think it did but wanted to eat something light.

Tonight I made salmon; I used a herb seasoning as well as a garlic parmesan seasoning. My favorite seasoning comes from a company called Kinders. I use them frequently. I also grilled some small peppers and air fried some Brussel sprouts. It was yummy!

I decided to try a different tactic this morning and not take my blood sugar until later in the morning, right when I was thinking about eating. I waited until 11:49 am, and it was 176mg. I figured that was too high to be putting food in my body, so I waited until 2:30 pm and retook it; it was 138mg. About 1:30 pm or so, I decided that I would try to add some lemon to my water cause I was bored with it. I did a little bit of research and read that, potentially, lemon water can help stabilize or lower your blood sugar. I drank lemon water for the rest of the day. And, my sugar was 132 when I retook it before dinner. Today’s blood sugar was MUCH better than yesterday.

Today was a little bit of a struggle with the water. I just finished drinking it, and it’s 8 pm. I’m hoping that it doesn’t make me have to use the restroom multiple times tonight.

Lunch today was leftover salad from last night and a meat stick. I have no idea how else to describe it. I think I found it at Costco a month or two ago; I felt like I needed more than just the salad.

We had been gifted cooked chicken cutlets. I was debating what to do with them but have had a hankering for lasagna. I decided to layer tomato sauce, chicken cutlet, more tomato sauce, ricotta (I added an egg to it), mozzarella and cheddar shredded cheese, more chicken, tomato sauce, ricotta mixture, and shredded cheese. I topped it with pork breadcrumbs. I then made a salad with cucumber, cherry tomato, peppers, feta, and a sweet onion vinaigrette.

My sugar was high today for some reason. I think maybe because I didn’t get enough sleep last night. Also, perhaps residual from cheating so much on Saturday. Often, if I restrict my eating to later in the day, it will go down. It did but not enough.

The goal was easy to meet today. I had two cups of coffee, 64 ounces of water, and the rest in crystal light. I was done by about 7 pm. We will see if it keeps me up all night.

gratitude

One of the things I’m learning about keeping yourself healthy is that you have to have gratitude. It’s difficult right now, as there is so much sad news in the world. Just the past few days, multiple people I know have lost people that were very dear to them.

I’m grateful for all of the warm memories my friends have of their loved ones. I am sending them out so much love and hope that they heal from their losses when they can.

Weekly Goal

My goal for the next five days is to drink one gallon of liquid each day. This can include coffee, crystal light drinks, water. At least 64 ounces of it has to be water.

I know from the last few years that staying hydrated is extremely important in diabetes management.

So, last night before bed, I filled up this water jug with water. I will use this for my water, coffee, etc., throughout the day. Every night before I go to sleep, I’ll fill it up again.

It was left over El Pollo Loco for lunch and some berries. Usually, I would not eat berries, but I bought them a week or so ago, and their shelf life is almost over. I added some feta to them.

Jean Valjean and I met a friend after we ate lunch. We met under the guise that we were going to have ice cream at Cold Stone Creamery, but I said that I was going to pass, and I stood outside while they went in and got ice cream. It felt like a win, which is what fighting this battle is all about, knowing when I have to say no to things. We walked down to the beach and ended up walking for almost five miles.

After five miles on the beach, I did not want to cook. We stopped by California Chicken Cafe and picked up their chicken salad. It has chicken, tomatoes, carrots, feta, broccoli, pasta, croutons, and pasta. I should not have had the pasta and croutons, but I figured after the walk, I could get away with it.

I wasn’t going to post my sugar level every day, but I changed my mind. I feel like if you’re going to follow my journey, you need to see it all. Instead of showing you each reading, I’m going to show you the days average. My blood sugar was very high this morning, but after the walk, I got it down to 126mg.

September 12, 2020 – Cheat Day

I need to set a few boundaries here, because you and I are going to be great friends, once again. I need you to know that I’m not going to use people’s real names, instead I’m going to use characters names from musicals. So, for example, my husband is going to be known as Jean Valjean, or JVJ for short. The wonderful thing about the internet is that I can tell you what I want, but just know when it comes to food and exercise I will be completely honest.

It’s ironic that I jump back into this and I start with a cheat day, but in the past Saturday’s have been my cheat days. Plus Jean Valjean and I were heading over to his families house and we were celebrating. One of our friends, Elle (Legally Blonde), got engaged, and we were celebrating at a socially distanced happy hour with champagne and food. I ate these wonderful taco’s from a place called Pepe’s Taco’s. You all, these taco’s were $1.79 a piece, you can’t get taco’s that price anywhere! I have to admit that I was a little sketched out because they also served hamburgers, fried chicken etc. I mean, come on, stay in your lane! But, my sister in law really wanted to eat there so we did.

These cupcakes were a gift to Elle and her fiance from another friend; this is a peanut butter cup one, and I just couldn’t resist, even though I should have. What is not pictured is the other vanilla cupcake that I ate later, after succumbing to two glasses of champagne. Told you I’d always be honest.

I ordered Jean Valjean and I El Pollo Loco to have delivered for when we got home, because I knew I was going to need something else. I’m embarrassed to say that I did not take a picture of the other piece of chicken, more mac & cheese, and the flour tortilla that I ate with garlic spread from Trader Joe’s.

Today we are going on a walk on the beach, a friend wants to stop and get ice cream, but I’m not going to eat any. My plan is just to sit there and watch them eat ice cream and cry.

I will post my goals for the week in another post, probably later tonight or early tomorrow morning. It’s time to get real!

I’m Back!

Okay, I’m jumping back in here. It’s been almost two years since I’ve posted on this site. Guess what?!? I still have diabetes. I need to get it under control, and I feel like the consistency of this site helped me a lot. So, I’d like to use it again. My ultimate goal is to get my sugar down. I’m not concerned about my weight, even though I need to be. I’m more worried about making sure my sugar is down and get rid of diabetes. Here is the thing, I know what the hell to do, drink water, walk, relax, etc.

I could make so many excuses, the pandemic; the world is burning around me, etc. But, that is not going to do me, or anyone, any good. So, I won’t make those excuses, just do my best.

Here are the rules. I’ll check in every day with what I ate. I’ll also post what my 30 and 90-day averages are blood sugar wise on F. I may not post my blood sugar every day because that is just too much. My hope is that this will be a way to keep me accountable. We can only start from where we are, right?

Here is where my current numbers are!

My first goal is to get the 90 days down to an average of 154 because that will put my A1C to 7%, according to the mayo clinic. Then my next goal is to get it down to an average of 126 or 6%. Then, ideally, I want to be below that.

I’m going to have one cheat day, for now. I’m not sure if I’ll change that and just skip cheat days but we will see. It’s going to be on Saturday’s because we do socially distanced happy hours with family and friends.
